Salmon & Chickpea Salad

Ingredients:
1 tbsp Olive oil
1/2 cup Cherry tomatoes, sliced in half
1/4 cup red onion, diced
1 tsp Mixed herbs
3/4 cup Chickpeas, canned
1 Salmon fillet
Pinch Salt & black pepper
1/2 tbsp White wine vinegar
1/2 cup Cucumber, chopped
1/2 cup Fresh basil, chopped
Instructions:
1.Bake salmon at 425 F for ~12 minutes or until done
2.Drain and rinse chickpeas
3.Combine chickpeas, tomatoes, red onion and basil
4. Mix olive oil, vinegar, dried herbs, salt and pepper to make dressing. Stir into chickpea mixture
5. Place salmon on top and enjoy!
