Nourish Bowl

Ingredients: Makes 5 Big Bowls

1 1/4 cup Quinoa Dry

Kale (i used one huge bag, thinking it's about 7 cups)

1 Lemon

Olive Oil

3/4 of 1 butternut squash, cut into cubes

1 head of cauliflower, chopped into florets

4 cups of brussel sprouts, cut intp quarters

2 apples, diced

Craisins (as many as you want to top with)

3/4 cup dairy-free feta cheese (can use normal of not df!)

5 Chicken Breasts

Sea Salt

1 Tbsp Garlic Powder


Garlic Hummus dressing: For 1 Bowl

2 Tbsp Garlic Hummus

1 1/2 Tbsp Water (can adjust water amount based on your desired consistency)


Instructions:

1.Preheat the oven to 400F and prepare two baking sheets. set aside.

2. Cook the chicken breasts(I use my air fryer but can be done any way you like)

3. Cut up and add the butternut squash, cauliflower, and brussel sprouts to the baking sheets and toss in olive oil and sea salt. Roast for 30-35 min or until everything begins to brown.

4. While the veggies are in the oven start by massaging the kale base with a generous amount of olive oil, juice from the lemon, garlic powder and salt for about 3 minutes. Then cook the quinoa and prepare the rest of the mix-ins.

6.Remove the veggies from the oven and let cool for a few minutes.

7.Whisk together the dressing ingredients until smooth.

8.Assemble the bowls(or bowl) and pour the dressing over top

9.The other bowls or ingredients can be stored in the fridge for up to a week!
