Quinoa Chilli

Ingredients (Serves 7):
2 cups quinoa
4 cups water
2 cups bell pepper diced
1 15oz can of black beans rinsed and drained
1 cup corn
1 cup salsa of choice
1 tomato diced
1 tbsp jalapeños
1 cup red onion diced
2 tsp chili powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp salt
1 cup fresh cilantro (garnish)
Avocado (garnish)
Lime to squeeze on top
Instructions:
1. Add all ingredients (except cilantro) into a large pot with a lid. Stir, cover and bring to a boil.
2.Once boiling turn down to medium/low heat and cook covered for 15 minutes or until liquid is completely absorbed.
3.When done, garnish with fresh cilantro, avocado & lime!
