Coffee Cake Baked Oats

Ingredients:
2½ cups old-fashioned rolled oats
1 tsp cinnamon
1 tsp baking powder
½ tsp sea salt
2 cups unsweetened almond milk
2 Tbsp maple syrup
1 Tbsp ground flaxseed
1 Tbsp coconut oil, melted
1 tsp vanilla extract
½ cup ripe bananas, mashed
Topping:
¼ cup coconut sugar
½ cup oat flour
1 tsp cinnamon
3 Tbsp coconut oil, not melted
Instructions:
1. Preheat the oven to 375°F and spray an 8×8 inch square baking dish with cooking spray.
2. Make the crumb topping: Add all the topping ingredients to a small bowl and mix with a fork until crumbly. Set aside.
3. Combine ingredients: Stir oats, cinnamon, baking powder, sea salt, almond milk, maple syrup, flaxseed, coconut oil, vanilla, and mashed bananas together in a large mixing bowl.
4. Pour the oatmeal mixture into the prepared baking pan. Sprinkle crumble topping on top of the base.
5. Bake for 35-40 minutes or until the topping is lightly browned and the toothpick comes out clean.
6. Let cool for 10-15 mins.
