Blueberry Protein Pancakes

Ingredients:
3/4 cup rolled oats
1/4 cup milk I used oat milk
1 medium banana
1 tbsp baking powder
1 scoop unflavored collagen
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp vanilla extract
1/2 cup blueberries
For extra protein can add 1/2-1 scoop of your fav plant-based vanilla protein powder
Topping:
Coconut milk whipped cream
Instructions:
1. Blend all ingredients except for the blueberries in a blender
2. Fold in blueberries after do not blend
3. Let the batter sit for 5-10 minutes to thicken
4. Cook, add your toppings & Enjoy
