Blueberry Baked Oats

Ingredients:
2 ¾ cups old-fashioned rolled oats
1½ tbsp chia seeds
1 tsp baking powder
¼ tsp salt
½ tsp cinnamon
3 tbsp maple syrup or honey
1 ripe banana
2 flax eggs (2 tbsp flax meal & 6 tbsp water)
1 ½ cup almond milk
¼ cup coconut oil
2 tsp vanilla extract
1 ½ cup blueberries
Optional toppings:
I did:
2 tbsp coconut milk yogurt
1 tbsp almond butter
Honey drizzled
A few pecans
Instructions:
1. Preheat the oven to 375°F. Spray a 9×9 or 8×8-inch baking dish with cooking oil spray or grease with coconut oil
2. Mash banana then mix all ingredients together in a bowl
3. Put in a baking dish and bake for 35min or until you see some brown on the outside & center looks set
4. Let it sit for 10 minutes before you cut it into squares
5. Top with desired toppings
