Lemon Squares

Ingredients
Crust:
1/2 cup rolled oats
1 cup almonds
1/2 cup unsweetened shredded coconut
10 pitted Medjool dates pinch of salt
Cream:
1 & 3/4 cups cashews
1/2 cup coconut cream
3 lemons, juiced
Zest of 2 lemons
1/4 cup maple syrup
Splash of vanilla
Instructions:
1. Combine crust ingredients in a processor and blend.
2. Press onto 8×8 dish lined with parchment paper. You might need to be patient before your processor turns it into this dough or you can leave it as crumbles and press down well.
3. Blend all of the cream ingredients, pour over the crust, and freeze until set.
